It’s getting hotter here in Austin, Texas, so I’m roasting, baking, and cooking less these days. Instead, I’m finding ways to cool off, like with this shockingly rich and delicious strawberry shake. Strawberries are a low-sugar fruit, and stevia sweetens without adding any calories, so this is super-low in sugar and super-high in decadence!
Don’t skimp on the vanilla! It really makes the strawberry flavor pop.
1/3 cup coconut milk
1/3 cup water
1 teaspoon vanilla
5 drops stevia
2 cups frozen strawberries
Mix in a blender. For a smoother consistency, add more water.
Note: This recipe uses stevia, a natural, plant-based sweetner. It is probably one of the best sweetners out there, however if you are prone to sugar / sweets addiction, discretion is advised!
